Halloween Part Two
When you scooped out your pumpkin did you spare a thought for its contents? Two in five Brit's buy a pumpkin for Halloween, but whilst US pumpkin buyers enjoy turning their fruit into a tasty dish, we Brit's have been far more reluctant to cook the scooped out insides.
As a result 18,000 tons of perfectly edible squash is tipped straight into the bin every Halloween.

Pumpkin soup is so easy to make and is very comforting on a chilly autumnal evening, if you haven't tried it I urge you to give it a go.
Pumpkin soup
Recipe
700g pumpkin, peeled and chopped
25g butter
1 onion, chopped
275ml of double cream or full fat milk
275ml of stock
Salt and pepper
Melt butter in a deep saucepan on medium heat
Add onion and stir until soft
Add pumpkin, season well
Lower the heat and allow vegetables to sweat for 15 minutes
Pour in cream/milk and stock
Cover pan and let the mixture simmer gently for 20 minutes
Pour into a food processor and puree
Reheat for 5 minutes, serve hot with crusty buttered bread and enjoy.
I hope you all had a great Halloween! I realised all too late that my old faithful ceramic pumpkin, which has stood outside my door for many a Halloween, was broken. With dusk descending I rushed to the local shops, where not a pumpkin was to be found. Fortunately the local children still came a calling in their spooky costumes much to my childish delight. My Bert, like mother like son, was off to a Halloween party in his full regalia.........
I tried to be a bit witchy (it comes quite naturally.)
