Bonfire Night


Well, it's bonfire night and no doubt you've all got your bangers at the ready, by which I mean sausages. According to Tesco, this week we will get through more sausages than any other time of the year. Sausages have become as celebrated a part of Guy Fawkes night as fireworks, a portable comestible, the sausage is the perfect choice.

The trick to perfect sausages is to always cut the links with a pair of scissors, that way you won't damage the ends. Never pierce your sausages: you will let out all the moisture and flavour. Most importantly, cook long and slow on a moderate heat, that way you will have a evenly cooked sausage.

For an extra bonfire twist: scatter sausages on a foil lined roasting tray
Preheat oven 200c/gas mark 6
Combine 4 parts maple syrup to 1 part olive oil
Drizzle over sausages, add sprigs of rosemary or grated orange zest
Cook for 45 minutes until golden and sticky


While you are tucking into your sausages you might enjoy a nice warm mug of boozy hot chocolate.

Recipe

2 tablespoons cocoa powder
4 tablespoons caster sugar
1/2 teaspoon salt
2 pints whole milk
1 cinnamon stick
160g milk chocolate, roughly chopped
6 tablespoons amaretto

Mix together the cocoa, sugar, salt and 3 tablespoons milk to form a smooth paste
Put the remaining milk in a saucepan with the cinnamon stick and heat gently
Stir in the paste



Add chocolate and stir until melted




Divide between 6 mugs and stir a tablespoon of amaretto into each

  1. Excellent advice re sausages! Wish I'd read that before I'd hacked at mine with a knife! Was considering prodding them with a fork but decided against it thankfully! Happy Nov 5th!
